Welcome to Yves-Marie Le Bourdonnec, newcomer in our district from April 12th.

30 May 2012 - Emeline Thevenet

If you happen to come by the avenue Victor Hugo, in the XVI arrondissement of Paris, have a look at the front of the Lamartine butcher’s. Its beautiful 1900 facade is well worth the detour. The legendary shop has been purchased by a man worthy of its reputation : Yves-Marie le Bourdonnec. He used to work in Asnières, at “le Couteau d’Argent” and he is opening his second shop on April 12th.

This maturation expert has been voted best butcher in Paris in 2003. He offers exquisite meat that he finds all around the world. His hamburger was even voted “best hamburger in the world’ by the New York food critic Jane Sigal.

His matured beef rib with Japanese whiskey (Nikka) is not to be missed. The fore rib is wrapped in a dish towel soaked in Nikka that you change each week for two months. Thus the meat gets a special tenderness as well as a unique taste. A must-try !
