During the truffle season, between October and March, we offer an exceptional white or black truffle risotto. The black winter truffles - ‘melanosporum’ – are bought each season directly from a producer in the region. This producer always selects the most beautiful truffles for us and promises us the best quality.
Our recipe is comprised of round Italian rice soaked in our own poultry stock. At the end of the cooking we mix in fresh Normandy cream and finally we add the fine slices of truffle. Throughout the year we offer other succulent risottos – with cèpes, with vegetables, with asparagus or with safran.
